whisk together yolks, whole eggs, and water
- add egg mixture to butter
add flour- DON'T OVER MIX

1 tb cocoa powder and water slurry add to 1/3 of the batter
fill the cake tin 1/3 of the way. add chocolate batter. layer on vanilla layer
with a fork. run corkscrews in the batter. run a thin line of melted butter long ways on the cake. it stops the starches from expanding. cook at 350 for 1 hr

Carmel Pecan Sause

1.5 oz corn syrup
3 oz water
6 oz cream
2 oz butter
6 oz pecans
1/2 oz vanilla
in a sause pan corn sryup, water and sugar and vanilla
leave- dont stir- until brown color
carefully add cream
stir in butter
and pecans (in this case both pecans and almonds)
the brownies were spread with chocolate ganche (1pt cream, 16 oz chocolate)
then the carmel suase with poured on top

Normally the recipe would be 1.6oz sugar and 1.6oz brown sugar instead of the 3.2oz of powdered sugar, but the class was experimenting with different ingredients.

mix in and cool for 30-45 min

Sweet potato pie filling

sweet potato 1 lb

Dark corn syrup 1.2oz

cinnamon, ginger, and nutmeg

milk added to egg and whisked

sweet potato mashed

egg mixture added to sweet poatoes

spices, sugar and flour added

corn syrup added. its easier to squeeze stick substances out of sran wrap than scrap it out of a bowl. this way nearly all of it is got.
(corn syrup increases shelf life)
