all the dry ingredients being sifted together. all put into a large bowl. 5% of extra like rosemary or cheese can be added.
butter being added in large chinks. butter should be marble sized when fully mixed

Cream Scones
8.5 oz pastry flour
3/8 t salt
2 oz orange sugar
.5 oz Baking Powder
2.25 oz butter
2.5 oz heavy cream
1 egg (56 g)
1 oz chocolate chips

dry ingredients mixed to together, butter added in chunks. mixed together- butter is marble sized.

cream added at edges. and mixed thoroughly
finished dough, chilled in fridge
Egg wash
1:1 ratio egg to water/milk
egg and water- water evaporates and leaves a shine
yolk and cream- dark glaze. cream soaks into biscuit and tenderizes more. kinda greassy
milk and eggs- dark bake and shine
ROLLING OUT THE DOUGH
- use bread flour to roll out the dough

bakes 400-425 dgrees for 10 min. then flip plus 5 more mins
