Mealy dough
Pasrty Flour 16.24oz
Butter 10.56 oz
Water 4.06oz
Salt .32oz
Sugar.82oz


put the flour salt and sugar in a bowland add butter

mix in butter-work it to peas sized

add water at the edges

mix in and cool for 30-45 min

roll out and cool again

and bake at 425 for 8 min

Flaky dough


Pastry Four 6.09oz
butter 2.61oz
Water 2.61oz
Salt .174oz
sugar .44oz

same technique as mealy dough except the butter is walnut sized
its to be used for the lattice


Sweet potato pie filling

sweet potato 1 lb

Brown sugar 60z

Dark corn syrup 1.2oz

milk 12oz

Pastry flour .6 oz

egg 6oz

cinnamon, ginger, and nutmeg


all the ingredients laid out

milk added to egg and whisked

sweet potato mashed

egg mixture added to sweet poatoes

spices, sugar and flour added

corn syrup added. its easier to squeeze stick substances out of sran wrap than scrap it out of a bowl. this way nearly all of it is got.
(corn syrup increases shelf life)

pie crust is put in the oven for thirty seconds so the egg coagulates
the pie filling is poured in

Apple pie filling
1.25 lbs Apples
.28 oz lemon juice
4.45oz sugar
.4 oz corn starch
.03oz nutmeg
.03oz cinnamon
.01oz salt
.4oz Butter
peel and cut apples

mix in ingredients
- butter used for dotting
place in pie crust and top with lattice.
