simple cookies


FINGER CONDOM!!

cookies are mostly made from the creaming method
Chocolate chip cookies
butter 2oz
Powdered Sugar 3.2oz
salt .048 oz
eggs 1.2oz
Vanilla .064 oz
pastry flour 4oz
Chocolate chips 4 oz
Walnuts 1.6oz
Baking soda .048oz

Normally the recipe would be 1.6oz sugar and 1.6oz brown sugar instead of the 3.2oz of powdered sugar, but the class was experimenting with different ingredients.

# 20 scoop 375 degrees 10 min
Almond Slices
Butter 3oz
Brown sugar 6oz
Cinnamon .085 oz
Egg yolk 1.5oz
Pastry Flour 7.5oz
Silvered Almonds 3oz
egg yolk has less water = more crumbly

add eggs quickly

flour- sifted and almonds
add to mixture
roll out dough into a log

in between a piece of parchment paper use a rolling pin pull and pess in while pulling the paper
- makes smooth edge
chill dough 30 mins

egg wash and roll in cinnamon sugar for a nice edge
cut 1/4 inch thick

foaming method.
eggs sugar and vanilla
- until pale and fluffy
add flour and nuts
form loaf. baking at 325 degrees for 18 mins
cut up into 1/2 inch slices
bake at 275 for 15 min

Banana Cream Pie
(because we had spare time)
225g graham cracker crust
- press down firmly
bake 7 min
-sugar cooks keeps moisture out
FILLING
milk 500g
sugar 20z
Egg yolk 1.5oz
egg 2oz
Cornstarch 1.25oz
butter 1oz
vanilla 8g
sugar 2oz

in a sauce pan- milk and sugar




whisk egg, sugar, and cornstarch
-temper eggs
pour a little milk into eggs- then pour eggs into milk
add butter
in the crust pour 1/2 mixture
layer cut up bananas
then pour the rest of the mixture
